FSSC 22000 v6 and UNI EN ISO 22005:2008 (traceability)

Food safety management systems and traceability

The FSSC 22000 course aims to provide a comprehensive overview of the international scheme for food safety management systems, fully recognised by the GFSI and based on ISO
22000, integrated with related technical standards (ISO/TS 22002-1 for food production, ISO/TS 22002-2 for packaging production, and other specific PRPs). The scheme is also consistent and compatible with ISO 9001 and ISO 14001 standards, thanks to alignment with the High Level Structure.

In addition to the requirements of ISO 22000 and Pre-Required Programs, version 6 of FSSC 22000 introduces additional requirements on: food fraud, food defence, food safety, quality culture, quality control, allergen management and environmental monitoring programs.
The latest revision also includes requirements to reduce food wastage and loss, in line with UN SDG targets.
The course also explores the principles of food traceability, both in terms of compliance and voluntary standards.
