Fraud Prevention and Food Chain Protection
 

The course provides the necessary knowledge to protect food supplies from intentional acts of contamination, tampering or fraud, events that can have serious consequences for public health and food safety. 
Through a theoretical-practical approach, the principles of Food Fraud and Food Defence will be deepened, with the aim of providing operational tools to identify vulnerabilities, assess risks and threats and develop an effective Food Defence Plan in accordance with international standards.

  • Preparation of the food fraud management plan;

  • Application case studies;

Second session - Food Defence

  • What is Food Defence: definitions, scope and real cases;
  • Regulatory framework and responsibilities;
  • Management systems for food safety;
  • Food Defence requirements in BRC, IFS, ISO 22000;
  • Vulnerability analysis for intentional acts: methods of risk and threat assessment;
  • Collection of useful information and sources;
  • Development of the Food Defence Plan;
  • Emergency management, alerts and traceability;
  • Case studies and operational simulations;
  • Final assessment test.
